Ingredients:
- 3 Mugs full of Basmati Rice
- 2 Medium sized Onions, finely chopped
- 1 Bulb of fresh Garlic, finely chopped
- 7 Tablespoons of Cooking Oil
- 1.5 inch piece of fresh Ginger, finely chopped
- 1.3Kg Chicken Fillet, bite size pieces
- 4 Tomatoes, chopped
- 2 Green Chillies, chopped
- 1/4 Teaspoon of Turmeric Powder (Haldi)
- 2 Ladles of Yoghurt
- 1/2 Teaspoon of Red Chilli Powder
- 5 Teaspoons of Salt
- 1 Tablespoon Dried Red Plums, sliced
- 1 Tablespoon Mint (Podina), chopped
- 1 Teaspoon Kewra Water
- 4 Teaspoons of Home Made Garam Masala
Instructions
(1) Heat oil on medium heat (should not be so hot that oil starts smoking)
(2) Add Onion and fry until brown, stir frequently
(3) Add Chicken, Ginger, Garlic, Tomatoes, Green Chillies, Yoghurt, 2 Teaspoons Salt and all spices
(4) Stir gently and cook Chicken on high heat until Chicken turns white and water dries out
(5) Remove off heat
(6) Soak Rice in water for few minutes and then strain it
(7) Take 6 Mugs of water. Add 3 Teaspoons Salt and the Rice strained previously
(8) Bring to boil and then cook on low heat until the Rice is more than half done. Strain water and then add the Rice to the pot containing Chicken
(9) Add 1 Tablespoon of dried sliced Red Plums, 1 Tablespoon of chopped Mint leaves, 1 Teaspoon of Kewra Water
(10) Cook another 10-15 minutes on low heat under lid until both Chicken and Rice are ready
Serve as is.
